Broken grades
The share of grains shorter than three-quarters of a whole grain. 5% is a premium table grade; 25% is a common value grade; 100% broken is sold for processing.
Moisture
Water content by weight. Above roughly 14% rice will not store safely through a long sea transit, so it is the parameter to check first.
Purity
The proportion of the contracted variety in the lot. High purity is what makes cooking behaviour consistent bag to bag.
Admixture
Other rice varieties or grades mixed into the lot, stated as a maximum percentage in the contract.
Sortex
Optical colour sorting. A sortexed lot has had discoloured, chalky and foreign grains removed by machine.
Crop year
The harvest the rice came from. Current-crop rice cooks softer; older crop is firmer and preferred by some markets.
